Our roof is a 3/12 slope with composite shingle, only about 6 years old. I constantly fight leaks when we get rain. Can metal roofing be put on this slope?
Also the house is open ceiling post and beam and currently on the roof above the 1 inch tongue and groove pine is 1" dense foam board, then OSB, then paper then composite shingle. Will it have to be completely stripped?

Most residential metal roofing systems can be used as low as 3:12 pitch.
Some metal roofs can be installed over foam though there may be a higher minimum pitch required for that. You would need to check into this with the manufacturer of the roofing you choose.
I think you may wish to take this opportunity to build some additional ventilation into your roof system, to help reduce heat gain and possible condensation problems.
