In your opinion, do you think snow would slip off more easily from standing seam or shingle applications? (Both being aluminum) And which do you think would be more economical?

Typically, the shingle systems will be made of thinner aluminum, because of the strength which forming builds into them. This can be expected to usually impact the comparative price of the two systems.
As far as the snow loading, it is, in my opinion, more important to have good insulation on top of your ceilings and good ventilation in the attic than it is to have a roof that will shed snow. That said, though, both systems should shed snow well. The standing seam might be a bit better.
