We have installed a new Everlast Metal Roof over 4" insulation w/ 2x4 strapping, a moisture barrier, etc. A "friend" supervised this install, as he has done building and remodeling in the past. We have 2 issues. The first is...he pre-drilled the screw holes directly in the center of the flat areas. I say this was wrong...
Second...he says we do not need Soffit Venting for a cold roof. This is because the ridges of the Metal Roof will not be covered, allowing venting to occur through that airspace...does this sound right?

Fastening methods vary from panel to panel and from manufacturer to manufacturer. Everlast is not a member of the MRA and I do not know what they specify for the installation of their product.
That said, though, fastening through the flat areas most many through-fastened panel profiles is not uncommon amongst other manufacturers.
However, as always, such calls should be made by the manufacturer of the roofing. Many people feel that metal roofing is a "generic" thing when, in fact, there are differences between styles and manufacturers. Proper fastening is required for wind loads and other things. It must be based upon the manufacturer's engineering and testing.
Proper attic ventilation requires intake and exhaust. This is achieved very well when the intake is in the form of soffit vents and the exhaust is a ridge vent.
Proper ventilation can help avoid an unhealthy accumulation of moisture, as well as summertime heat, in the attic. This can help to avoid ice damming and reduce air conditioning costs.
